These were quick and easy. I used 85/15 ground beef and it made it SOOO good and helped fry the onions in the oven. Definitely would do this again. I also baked it for 20-25 minutes at 400.

Chili Spaghetti Squash Casserole

This was great. I made it while on week 1 of the authors free low carb meal plans. I cooked the spaghetti squash according to these instructions using the "softer spaghetti" option. Since this is oven cooked also, next time i'll try al dente and see if it's any better.

Easy Spaghetti

1 lb spaghetti noodles
25 oz jar marinara (pasta sauce)
1 lb ground beef

Cook ground beef, pour off any excess grease into trash. Stir in sauce.
Boil pasta in 5 quart pot on high boil (but not so it boils over), according to time in directions.

Serve with a vegetable. Half this recipe barely feeds our family...so a full recipe is probably necessary unless served with another side dish.

Ultimate Taco Salad

Prepare the taco meat as instructed in the recipe, along with the extra veggies. Chop the kale extra tiny (also, do NOT use 200g. Just get a couple big handfuls. I have an enormous bag of chopped kale that is 285 g, so I can't imagine 2 cups of raw kale equaling 200 g, unless you measured 2 cups cooked.) Instead of the scratch seasoning the cookbook has in the back, I used 4 T of store bought taco seasoning. Or you could use a taco seasoning packet if you don't have bulk seasoning.

I didn't have zucchini, so I just left that out and used an entire green bell pepper and onion, which i think made up for the missing cup. But it doesn't need to be that precise anyway.

I serve this over ribboned romaine lettuce for me, and the rest of my family makes burritos with it.

My favorite salad is this:
ultimate taco meat
lettuce
avocado (OR olives)
tomatoes
refried beans (a little)
yogurt ranch dressing.
chopped cilantro!!!

I don't care about sour cream or cheese when I have the other things. But I still serve them so others can have them.

Grilled Cheeseburger Wrap

Grilled Cheeseburger Wrap


Course: Main Course

Serves: 5

Ingredients

  • 1 pound ground beef (I used 93/7 organic grass fed beef)
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon ketchup
  • 1 tablespoon grated parmesan
  • 1 teaspoon dried onion flakes
  • 1⁄8 teaspoon pepper
  • 1⁄8 teaspoon salt
  • 5 100 calorie wraps (I use Flatout Wraps)
  • 5 slices american cheese (I use wegmans organic)
  • 2 roma tomatoes sliced
  • 1 cup romaine lettuce
  • Additional ketchup (optional)
  • Mustard (opti0nal)

Directions

  1. In a medium to large skillet coated with cooking spray cook the beef on medium till almost cooked through but still a little pink (about 7-10 minutes). Break beef up as it cooks.
  2. Add worcestershire, ketchup, grated parmesan, dried onion flakes, salt, and pepper to the beef. Mix together until thoroughly combined.
  3. Continue cooking until beef is cooked all the way through and is no longer pink.
  4. Turn on indoor grill to 350 or you can also use a grill plan.
  5. In the center of the wrap place a slice of cheese and ½ cup of the beef mixture. Add tomato and lettuce. Then if you are using , and I highly recommend you do, add some ketchup and mustard.
  6. Roll the wrap and place seam side down on grill. Once there are nice grill marks turn over. Grill for another 2-3 minutes then remove.
  7. Repeat steps 4 and 5 for the rest of the wraps.

These are fantastic. I used medium tortillas the first time, (gf for me), but I definitely need to try with the flat out wraps because the tortillas let filling fall out.

Enchilada Stuffed Peppers

This is from Meals Made Simple, p152. The filling is fantastic. This is a great way to use up the leftover sweet potato bits after spiralizing for the arrabbiata recipe. You can just make the filling and serve it with tortillas and avocado.  That is more kid friendly and faster too, when needed.

Meatloaf Meatballs

Meatloaf Meatballs from p 148 of Meals Made Simple.

These are great. They were very loose but still managed to hold together enough to flip and cook. Mine needed 25 minutes, but they were a little large I think. I also used pork sausage since I didn't have ground pork,and that made them a little bit more fatty than they should have been. As they baked a lot of oil came out, but they were still great. I made them with coconut flour.

The sauce was good. I used brown rice syrup instead of honey. The sweetness level was perfect, and I think the recipe was supposed to be like homemade ketchup (with a bit of mustard). It was great! I did use tomato puree in it, which I had never bought before. I've read that strained or crushed tomatoes would be equivalent to puree.

We ate these with rice and corn, but the rice is really not necessary. These really are like meatloaf and stand on their own.

This was good. I had to add an extra quart of liquid (I added it as beef broth) so added a 6 oz can of tomato paste so the tomato flavor wasn't too thin. The cabbage needed to cook for at least 1.5 hours before it was tender enough.

David and Ila both liked it.

Unstuffed Cabbage

This recipe is reminiscent of golompke, but turned out better. It is from the 15 minute meal low-carb cookbook by Dana Carpenter. David liked this a lot. The recipe author says she altered a recipe from the I Hate to Cook Cookbook. The original is called "The Colonel's Lady's Ham" and is shown here.

The leftovers were great in a GF tortilla.

Acorn Squash with Beef Saute

Halve acorn squash, dig out seeds, and bake open face down at 425. 30 minutes ish is probably enough. I would do 1 squash per adult.

Then saute onions, leek, green pepper (or whatever, really) and seasonings until mostly soft. Add a pound of ground beef, brown that. Serve inside baked squash.

I have used garam masala + nutmeg in this.

Note: We really enjoyed the filling from this recipe. David preferred the savory spice blend in it to garam masala/nutmeg.

Boy Choy Beef Scramble

I made the recipe linked above, but with 1 whole red onion and 1 head of bok choy. It is the first time I've enjoyed bok choy in a recipe. I used cumin seed, ground mustard, and ground tumeric, plus some garam masala that I have. It was very good! I added a pound of ground beef and we ate it over rice. Will make this again when I have bok choy to use up.

Shepherd's Pie III

1 lb ground beef
1/2 lb liver (presoaked in milk, then ground or chopped in processor, being careful not to make it a paste)
whatever vegetables. Celery, carrots, onion, pepper, green beans, other root veg, etc.
2 T gf flour (rice/potato/tapioca)
1-2 cups broth
1 T tomato paste
1 T worcestershire sauce
salt and pepper

Get liver soaking in milk. It helps remove blood and some of the livery taste.

Boil 1.5-2 lb unpeeled potatoes.
Meanwhile, saute veggies in butter or coconut oil. Add beef and brown. (My cast iron worked well since there was adequate fat and I didn't push the beef around too much initially).

Add 1 Tbsp tomato paste, 1 Tbsp worcestershire sauce, and 2 Tbsp gf flour blend (i like trader joes). Once flour is incorporated, add 1 cup broth. Once broth is heated, add liver to the saute pan. Let cook for 10 minutes. I think I added a second cup of broth too since it looked dry at some point.

When potatoes are done, mash with butter and milk (and s&p). Put it all in a 2 quart (minimum) casserole dish. Spread (plop) potatoes on top, and sprinkle cheese if desired. Bake until bubbly (20 min or so).

Golompke Beef

This recipe has a lot of room to improve. I used 2 week expired cole slaw mix, so there was a slight fermented taste to it. I used leftover trader joes tomato soup, poured over leftover rice. I also put in a trader joes onion dip packet into the ground beef. I would use canned tomatoes next time, and maybe work on the seasonings. Has potential, will make again.

Update: Made again with 1/2 head (of an enormous cabbage). I added 1 tsp salt, garlic pwder, and tarragon. I used 2 cups tomato sauce and a 14 oz can of diced tomatoes instead of the soup and water. The dish was great this time! I did not precook the rice and it needed the full 1h 15m of time to cook. Also it could use 1.5 lb ground beef when it is a larger amount of cabbage like I used here.

This was great. It barely fits in a 2 quart casserole. If you add extra stuff to it beyond the recipe, use a bigger dish.

9/27/2015: This fit great into my oval 2.5 quart casserole dish. I added a hot pepper and a sweet pepper and cooked them with the meat, and also let onion and fresh garlic soften before putting it all together. Also I think it could have used extra tomato sauce. 8 oz wasn't quite enough. I left out the taco seasoning and replaced it with 2 tsp of cumin to balance with the heat from the pepper.

Shepherd's Pie II

This recipe is different from the one I usually make since it does not use a gravy packet. I do like to add a couple tablespoons of flour to the meat before adding liquid though, as it gives it a nice consistency. This could be gluten free if used a gf flour, or just leave it out completely. I've left it out and its good both ways.

Sloppy Joes

This was great. It is done in less than 30 minutes too. David loves it. We halved the brown sugar.or at least did not pack it into the 1/4 cup, and it was a perfect amount of sweetness. I put in 1.25 lbs of meat as called for. We used giant buns and even then the recipe could easily have filled 6 buns, likely more.
