Phyllis's Rhubarb Custard Pie

 Easiest and Best Rhubarb Pie

From Phyllis

 

Mix together with fork in a medium pie pan until crumbly

1 Stick (1/4) butter

1 Cup Flour

5 Tablespoon powdered sugar

Press all but ½ cup into pie pan. 

 

Then combine the following:

3-4 Cup cut rhubarb in @ ½” pieces

¼ Cup Flour

1 Cup Sugar or for less sugar ¾ Cup

¼ Teaspoon Salt

3 Blended eggs

Instruction: Stir well. Pour into pie pan with above crust. 

Bake 40 minutes at 350 degrees

 

Note: This recipe was given to me in 1970’s when I was in college by a mother of a fellow student.
