I did not blend it up, but mashed it some. Also, did not add paprika since I feel like that only adds color, not flavor. I used 2 pints of home canned sprouted pinto beans.

I thought it was great, and had it be the main filling of tortillas for dinner. DH only gave it a 3.5, because he is partial to meat.

Quick Cole Slaw

I made this to go with some sloppy joe leftovers. This is good on the side or as a part of the sandwich. It adds a nice crunch which I like, so I think it is great with the sandwich. David gave it a 3.5 mainly because he doesn't care much about cole slaw. But I think it was pretty good! Ila didn't care for it much thought. She threw it on the floor:)

I call this "quick" in the title because it uses store bought cole slaw (shredded cabbage and carrot).

Note, 8/2020: David liked it this time. I used "21 seasoning solute" from Trader Joes in lieu of salt/pepper/celery seed, primarily because it had celery seed in it and I didn't have any.

Mexican Bean Salad

I loved this salad. I used half the salt and sugar called for and put in garbanzo beans instead of black since that's what I had. Next time I will also halve the oil and vinegar since there was too much.

This is best eaten in the first couple days since the cilantro will turn brown and there is a lot of starch released  into the oil which makes it thick and weird.

Corn and Black Bean Salad

Corn and Black Bean Salad

I adore this salad. It is best when you have really sweet corn. This might work with a super awesome brand of frozen corn, but fresh is best.

2 cobs of sweet fresh corn
1 can of black beans, rinsed
1-2 tomatoes, chopped
1 avocado, chopped
handful cilantro, chopped

Cut the corn from the cob. I had never eaten corn raw like this until Reija made this salad at a dinner last summer. It rocks. You could add other raw things too, like red bell pepper or fresh green beans.
Mix corn with other ingredients.

Eat.

I love this recipe since it is so fresh and good. I have discovered that DH would like this much more sans cilantro. Next time I'll put it in a bowl to pass around as a garnish.

Eggplant Parmigiana

This recipe has only 5 ingredients and was pretty easy. I tend to like eggplant dishes more than DH so I really liked it while he merely liked it. I also really liked the flavor of the eggplant skin.

Next time I will only do half the recipe so there aren't as many leftovers. As written, it would probably serve 6.

Tortilla Pie

This was very quick and good. I did not heat/fry the tortillas. It fit perfectly into an 8x8 inch baking dish since I used 8 inch diameter medium size tortillas.

notes:
If using GF Udi brand white tortillas, they should be fried and crisped up first. They get too soggy otherwise. (But still good..but could be better!)

French Toast

This is how I make french toast (this will make 6-8 pieces)

1 cup milk
3 eggs
1 tsp vanilla
1 tsp cinnamon

Mix together and dip bread slice into mixture. Then cook on griddle or in pan. It's yum! I like it a lot more than DH though...

Eggplant Caponata


I adore this recipe. It is simple with few ingredients, but so full of flavor. It is not meant to eaten plain--you eat it on top of sliced sourdough bread (or regular french bread is fine). Don't wait too long to use your eggplant--it should be pale green and not brown inside. Whenever I leave an eggplant in the fridge for a week it has usually turned light brown and splotchy (inside) by then. I'm not sure if brown eggplant = nasty eggplant, but it probably isn't as good as it could be. The leftovers are awesome.
Note: I tried this with green bell pepper instead of red and it was definitely inferior.
Also, the last time I made this I didn't let the eggplant sit very long and it turned out very bitter. I'm not sure if that was a fluke or not. It was imported mexican eggplant.
