Roasted Brussels Sprouts with Pecans and Avocado

David doesn't like brussels sprouts, but he liked this. He said roasting makes them taste better, so I'll have to remember that for future side dishes with brussels sprouts. We made a half batch and ate it all, but it was a bit too much veg for 2 people.

I loved this recipe. David didn't rate it as high as me because he doesn't like fish as much, and that fish doesn't do well in tacos. But I disagree!

BLT Turkey/Avocado/Cheese Melt

So I have a "Snackster" and I adore it. It is one of those sandwich pocket things, that turns out two sandwiches that look like this:


So anyway, tonight I used it. I put turkey, cheese, and miracle whip (because DH is of that variety) on two sandwiches and toasted them in the snackster. I had cooked bacon as well, and when the sandwiches were toasted I pulled them out and put bacon, avocado, tomato, and lettuce in them.  They were great! I like doing a  hot sandwich dinner each week because it is quick but interesting. Toasting it makes it seem like it goes beyond lunch food somehow.

I also just saw this website that has ideas for a bunch of fillings. I'll have to check it out.

Rice and corn salad

This was so good. I used medium grain white rice and frozen yellow corn. I used an entire poblano pepper as well as a whole yellow bell pepper. And used green zucchini. I've only seen yellow zucchini once earlier this year.

The poblano pepper hardly added any heat at all. It was very mild. So don't be afraid. The cilantro was lovely as well. But only if you like cilantro. Apparently some people don't. Weird people.

The sweet corn mixed with creamy avocado was a nice combination. Loved it!

Shredded pork tacos

This would have been great if I'd had good shredded pork. I now have an awesome recipe for shredded pork from Cooks Illustrated that I will try soon.

I thought the pork was sort of gross (left over from a failed crockpot pork attempt), so I barely ate any of it. Also, the avocado I bought was brown so we didn't have any of that.

But. DH still liked it. With avocado and good shredded pork, it would have been great. So the rating takes this into consideration.
