Classic Potato Salad

This was really good, I think my favorite yet. I altered the recipe somewhat, the result is below.

4 lbs peeled russet potatoes, diced
1 cups mayonnaise
2 tablespoons cider vinegar
1 tablespoon yellow mustard
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon pepper
2 celery ribs, sliced
1 cup onion, minced (really minced!)
5 hard-boiled eggs and chopped
paprika

Boil peeled/diced potatoes in salted water until done. Put them in cold water to start the boil, then cover until boil. Take lid off and watch closely testing every minute or so until done (may need to turn down heat somewhat to prevent boiling over). Pour into colander and run cold water over it to stop cooking.
Place potatoes in large bowl.
Mix mayonnaise, cider vinegar, mustard, salt, garlic powder, and pepper in another bowl.
Add to potatoes.
Add celery and onions and mix well.
Stir in eggs.
Sprinkle a little paprika on top.

Refrigerate and serve chilled.
