Banana Muffins

Banana muffins

I made this with 200 grams of gluten free flour blend (gf multipurpose, buckwheat, and millet), 1 tsp xanthum gum, and reduced sugar to 1/2 cup. I did sprinkle some sugar on top of the muffins before baking to get a nice crusty top.

They turned out great.

Banana Cream Pie

I made this using the 3 T cornstarch option, and topped it with whipped cream (1/2 c blended with 1 T sugar). The pudding I reduced the sugar to 1/3 cup. The pie would have been disgustingly sweet with the whole 3/4. The pudding recipe is very similar to the Betty Crocker one I make a lot, which also uses 1/3 cup sugar.

These are good. I only used 1 T of brown rice syrup, and should really leave it out totally. I spread this over 12 muffins and it did need 25 minutes in the oven.

Katelyn Hall's Banana Bread

Notes: This is the banana bread to rule them all. This has replaced all other banana bread recipes that I've used in the past. Now if only I had a gf version:)

Preheat the oven to 350 degrees. Coat 1 bread pan or muffin tin with cooking spray.

Combine and mix until fluffy:
2/3 c sugar
1/3 c butter
2 eggs
2 T milk

Add dry ingredients and 1 cup mashed ripe bananas (2 or 3 bananas) (plus any walnuts/chocolate chips if you'd like) and mix until well blended:
1 3/4 c flour
1 1/4 t baking powder
1/2 t baking soda
3/4 t salt

Fill either the bread pan with batter and cook for 50-60 minutes OR fill muffin tin 2/3 full and cook for 15-20 minutes. I also like to sprinkle sugar on top before baking. Enjoy!

this was great! I used an immersion blender to mix 1/4 cup cream with 3 frozen bananas. They were ripe, not black! Save black for banana bread...

No Sugar Banana Muffins

I made these for Janie and she loved them!

Ingredients:

3 lg. bananas
1 tsp cinnamon
1 egg
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. sea salt
1 1/2 c. whole wheat flour
1/3 c. melted butter

Preparation:

Mash bananas.
Add cinnamon and slightly beaten egg.
Add melted butter.
Sift dry ingredients together and add to above mixture.
Mix until moistened.

Bake at 375 degrees for 20 minutes.

This makes one dozen muffins.

Note: I have made these with 1/2 cup chopped walnuts and 1/3 cup chocolate chips added.
