FAIL Soaked Whole Wheat Crackers

Soaked Whole Wheat Crackers

490 grams whole wheat flour (140 g/cup)
1/4 cup melted coconut oil
1 cup water
2 Tbsp. raw apple cider vinegar

Add after soaking:
1 tsp. sea salt
1 1/2 tsp. baking powder
These were terrible.  I did two batches, rolling them out and scoring them with a pastry wheel I have. The first I baked 10 minutes. They were soft and chewy, definitely not cracker like. Ila said they were "noodley." The second batch I did 15 minutes. They were hard, not flaky or anything, just hard. Ila said those were like biscuits.

Either way, I will not be making these again. I think the original recipe called for ww pastry flour, and I think that using regular ww flour just does not work. Thankfully the kids still like them so they will not go to waste!

Strawberry Yogurt

This did NOT work. I did everything it said. My strawberries were thawed, but the water would have been present whether thawed or not.  I am really bummed. Now I have a bunch of strawberry yogurt drink that kids won't eat.

I should say, that it was fine and made plain yogurt, but it did not set up in the fridge after adding the fruit and other extras.

Baba Ghanoush Gratin

This is another from Primal Cravings. It did not turn out well. In fact, I threw most of it out. It might have worked out better if the eggplant was sliced at 1/2 inch (and not 1 inch as the book says to do). Also, pureeing the onions was a big mistake. It was an overwhelming amount of thick pink sauce. I think pureeing a small portion might have been ok if the rest was left chunky.

David doesn't like eggplant very much anyway, and this dish was like chewy half cooked eggplant with pink puree. It was pretty awful.

Lobster Tails

So David hates shrimp because of the texture. And it turns out lobster texture is very shrimp like. So he really couldn't eat any.

I used less than half the butter called for, and each lobster tail was 5 oz. It was ok, but I like shrimp better (and it's cheaper).
