Cauliflower Pizza

Cauliflower Pizza

This was a relatively easy and tasty cauliflower pizza crust. The only issue is that the author recommends using foil, which I used, and the crust was totally glued to it. I had to waste a bunch of it scraping it off, and then worry about little bits of tin foil that had gotten torn and stuck to the pizza. From the picture if looks like the author used parchment paper, so maybe it will work that way.

Creamy Chicken Soup

Creamy Chicken Soup

I love this soup. I think it a great way to use up leftover cauliflower, which is what I had after making the Chicken Rice Casserole. I did add about 1/3 cup of coconut milk to make it even creamier. The bone broth I had was made mostly from chicken parts so it tasted very chickeny and yummy!

Cauliflower Pizza Crust

Cauliflower Pizza Crust

David and I both liked this.  I used a cheese cloth. You really do have to squeeze the life out of the cauliflower. Finally I gave up. I could have gotten more out I think if I'd wrapped up the cheesecloth bundle in a towel and stepped on it. I'll have to try that next time.  It made a small pizza, but was enough for 2 servings. We were both full after.

I used Chavrie (with herb) goat cheese, but only because I had some left over from christmas. It is kind of expensive. I'll have to figure out something else for next time. I looked in the comments, though, and you don't really need the goat cheese in the crust. It works without it. I added it mainly so the pizza would be bigger.

I "riced" the cauliflower in my blendtec blender. I poured water over the top too. I'm not sure how it'd do without the water. I can experiment I guess.

Spicy Cauliflower

http://www.101cookbooks.com/archives/spicy-cauliflower-with-sesame-recipe.html

This recipe is a yummy way to eat cauliflower. We both enjoyed it. I had dried red chilies and put those in, but didn't have cilantro or jalapeƱos. It was still mildly spicy and good. It was mostly the seeds that came out of the chilies that made it spicy since we didn't eat the chilies themselves.

Anyway, I highly recommend. The ginger, garlic, and sesame seeds are really important. Make sure you have those!

Aloo Gobi

http://www.recipezaar.com/Aloo-Gobi-84324

Of course since I watched Bend it like Beckham a few years ago I had to try and make Aloo Gobi eventually.

This is a great recipe. We both like it, I've made it a few times before. Bring on the spices!

Note on leftovers: You don't want to have many leftovers when making this recipe. The last time I made it I had tons, and the peppers (an overly spicy jalepeno) I put in got stronger and stronger and the consistency of the dish became less appetizing. Neither DH or I were excited about leftovers. Next time I would cut the recipe in half at least. (when making for two people).
