Mrs. Field's Cookies

2 cups brown sugar
2 cups white sugar
2 cups butter
4 eggs
2 tsp vanilla

mix well

2 tsp baking powder
2 tsp baking soda
1 tsp salt
4 cups flour

mix well

Mix all together

Then add 5 cups quick oats
20 oz choc chips

Bake 400 for 6 minutes, will be soft.

1/2 inch at most deep in sheet pan.

Jello Shamrock Cookies

Original:
3 cups flour
1 cup sugar
1 tsp baking powder
1 pkg 3 oz lime jello (mom revised to 6 oz jello)
1 cup shortening (mom revised to 1/2 cup)
3 eggs
1-2 tbsp milk

Add shortening to dry, then eggs, then roll out and cut into shapes. bake 350F for 8 minutes

Notes: better with lime extract added

3/13/2021: I made the original recipe using lard instead of shortening and 1 tbsp milk. I added a tsp of lime extract which boosted the lime flavor quite a bit and was very nice.

3/17/2024: By weight, three cups flour is not enough (i.e. 360 grams). Do cups by volume next time, or use 154 grams per cup rather than 120 grams.

Oatmeal Chocolate Chip Cookies

I made this as written except i used 1 cup of lily's dark chocolate chips which are stevia sweetened. The cookies were sweet but not as sweet as regular oatmeal cookies, but I liked them and it was perfect. Will remember this recipe.

These cookies were great--I hate whipping egg whites so these were super easy and fast macaroons. Definitely use the baking paper or silpat. I made them inside muffin tins and they all stuck badly and had to be scraped out. The crust on these is divine. I reduced the sugar to 80g since I used sweetened shredded coconut, and I'm guessing the original recipe wants unsweetened. They were plenty sweet.

Peanut butter monster cookies

Some very good cookies! I made them with sunbutter for st patricks day. it didn't turn green as fast or as well as I'd hoped because there was no flour in them and were flat and thin, but still great for a gluten free cookie recipe. Use peanut butter next time.

Best Gluten Free Chocolate Chip Cookies

I made these and they really are fantastic. Make sure to use the correct flours. This is the best I've had and I like that it uses white rice flour.

I tried making these with part nuts, part mint chips, and part chocolate chips. I think all chocolate chips would be better, mint chips are kindof strange.

Thin and Crispy Chocolate Chip Cookies

I made the Thin and Crispy Chocolate Chip Cookies from Primal Cravings.

I think I ruined the recipe, since I replaced the butter with palm shortening, and the sugar with sucanat. It did not mix up like it was supposed to, and I had to add twice the water it called for. They did cook up and look normal, but they had a strange flavor and I'm not sure if its the sucanat or the flours in the recipe. I think with my diary-free restrictions this is not the best recipe for me, since it is designed around using butter, which has a particular moisture content that does not compare to the replacements.

These turned out great. I used sweetened sunbutter I got from Trader Joes, so I left out the honey to compensate. Also only used 5 dates since they were hefty medjool ones. They were great! I made them in the morning and by dinner they were a very dark green. Success!
